emm's vegan mac and cheese
This is my sister's vegan mac and cheese recipe - it's delicious!
Serves 4
"Cheese" powder:
- 1 cup nooch (50g)
- 6tbsp cornstarch (65g)
- 1tbsp onion powder
- 2tsp garlic powder
- 1tbsp salt
- 1tbsp turmeric and mild smoked paprika
- 1/2tsp English mustard powder
Fresh ingredients:
- 1/2 block of vegan applewood
- 500g macaroni
- 1 broccoli
- 1 1/2 cup oat milk
- 3 tbsp vegan butter
- Pepper to taste
Cut the broccoli up into small pieces and cook with the pasta until it's partly cooked - it will finish in the oven.
Blend the powder ingredients to combine, and grate the vegan applewood.
Simmer milk and whisk in the powder. Add about 3/4 of the grated applewood and the butter, and grind in the pepper.
Once the pasta mostly cooked, drain and add to a baking tray with the sauce. Sprinkle over the remaining applewood and bake for 30-40 mins, or until the cheese melts and the top layer is golden and crispy.
